OUR STORY
Pablito's Burritos was born out of a passion to offer the best breakfast burritos to the west side of town, where demand was rapidly rising. Owners Jeff Progar and Marvin Williams saw a brilliant opportunity to expand by leveraging the resources of their existing restaurant, Abrusci’s Fire & Vine, during off-peak hours. With the restaurant underutilized in the mornings, assembling offsite burritos for a grab-and-go breakfast option perfectly catered to early risers.
Jeff and Marvin tirelessly experimented with recipes for months, refining their offerings until they had perfected four amazing burrito varieties. Meanwhile, they meticulously planned costs, streamlined the workload, and coordinated with the staff at Fire & Vine to seamlessly integrate this new venture. The final catalyst was the pandemic. When COVID-19 hit, the grab-and-go, quick-prep model became a hit, and in March 2020, Pablito’s Burritos officially launched.
